The outdoor grill stands – more varieties of sausage than I thought possible – have a fabulous mechanism for distributing heat: the grill is suspended on three chains from a central point, and swirls above the flames

Cooking With Gas

For the past couple of years Tina’s been begging me to get a new grill, but I’ve resisted. For one, it was a wedding gift from my friend Richard, so I’m a bit emotionally attached to it. Secondly, I’m not a huge fan of the whole disposability thing. Yes, I could afford a new grill, but what the hell am I gonna do with the one I have? I just think that we as a society are too quick to chuck stuff that’s perfectly good (I get that from the pig farmer, I think). Aside from some minor wear and tear, there was nothing structurally wrong with it. After spending on a new burner element and for a new burner grill, I’ve got a perfectly capable grill that will last me at least another 8 years. I’ll spend on 8 years of use any day of the week.

Peruvian Rotisserie Chicken
Photos from our first attempt with our new rotisserie device for the DCS Grills. The skewer was too long for our DCS, but I jimmied it with a wad of tin foil so that it would turn. The motor was also having problems – opening it up, I found three broken plastic pieces (part of screw holes) bouncing around, probably interfering with the gears. All fixed, the food looks good!

Grilled Corn

OK, I know it is not corn season. Even though the store usually has some kind of miserable looking "off season corn" around. Not today. So, in order to make up the "grilled corn" part of the grilled corn salsa, I just "grilled" corn from the can.

Outdoor diners – Il Fornaio

The pastries at are still good, but the cooked breakfasts have gone downhill. The doughnut was still light and fluffy with a good firm custard inside.
The sardines on the otherhand, while just cooked, didn’t have any charring from the grill, almost as if it had been poached! It did have a crunchy breadcrumb sprinklings of pangrattato, but that was devoid of any garlic flavour, which would have helped balance the fishiness. The eggplant relish was quite heavy with cardamom, and that didn’t suit the sardines either. Perhaps this would have been better as an escabeche with sweet and sour onions.
The grilled sourdough was great though. I do love the bread at Il Fornaio!
I wonder if the bistro is still doing inventive dishes at lunch and dinner? They used to have amazing items like the Fig and Basil wrapped with Prosciutto with Olive Oil and Vincotto or Pork Chops with Roquefort Butter and Fat Fries. Or even yummy breakfasts like Poached Pear and Blue Mascarpone on Sourdough Toast!
